Hungry?

Café Rio Salad or Burrito

Layer on a plate:

Warm whole grain tortillas (whole wheat or corn)

Sweet Lime Cilantro rice

Black Beans

1 head romaine lettuce, shredded

Toppings:

1 cup diced tomatoes

Guacamole

Tortilla Strips

Lime Cilantro Vinaigrette or Creamy Tomatillo Dressing

Sweet Lime Cilantro Rice

1 quart vegetable broth or chicken stock 2 cups brown rice

1 tsp salt 2TBSP each: lime juice, healthy mayo and honey

1 TBSP cilantro or parsley

Lime Cilantro Vinaigrette

2 cups canola oil 1 cup apple cider vinegar

4 TBSP dried cilantro or parsley flakes 2 tsp salt

1 TBSP lime juice 3 TBSP honey or frozen white grape juice concentrate

Café Rio Creamy Tomatillo Dressing

3 cups healthy mayo, 1 lemon squeezed, 1 tsp garlic powder, ½ tsp. salt, 1 TBSP parsley- mix together to make a Ranch dressing. Then for creamy tomatillo dressing:

1 cup Ranch Dressing 1 (12 oz) can tomatillos drained, then pureed

½ bunch cilantro (or parsley) ¼ tsp cayenne or hot pepper sauce

Measure ingredients into a large liquid measuring cup. Blend with hand blender and enjoy!
