Cheesy Potato Soup

The other day I really, really wanted some kind of cheese soup.  I mean really, really, really wanted a creamy, cheesy warm dipping your roll in kind of soup. But I didn't want anything from a can and had no money to go somewhere yummy like Zupa's (best cauliflower soup ever there)

I got home and surveyed my supplies, perused a few recipe books and then took stock of my pantry again and an idea began to form in my head.

I stewed, I chopped, I stirred, I shredded, I simmered and when I was done, not only did my kitchen smell wonderful, my children pronounced it 'THE BEST SOUP EVER MADE!!!" and have asked for it every single day since.  In fact Brandi made a mini batch for herself last night because all the left overs were gone (and there was much pouting by everyone over that fact) and the kids have convinced me to make it for the ward party instead of what I had planned.

And the best part?  The simplicity of the soup.

And I'll even share the recipe with you:

Creamy Cheesy Potatoe Soup

2 cans chicken broth
1 onion, chopped
4 cloves garlic
1/2 tsp salt
1 tsp pepper

Put in a 4-5 quart saucepan and simmer while you chop
4 carrots
4 stalks celery
10-15 potatoes (enough to fill the pot 3/4 full)

Add to pot and barely cover with water.  Simmer until veggies are tender.

Stir in
2 pkgs cream cheese cut into chunks
1-2 cups grated cheddar cheese

Stir until cheese is melted and soup is creamy
Serve with your favorite roll
