Substitutions

It is Strawberry Days here. That means bowls and bowls of luscious ripe red strawberries and oodles of cream. The way I like them is to slice the strawberries into my bowl, spoon the sugar on top and then pour either half and half or cream over them and then sit back and savor.

Except this year I have a problem. I no longer eat sugar. Or cream.



A few days later we will pull out the ice cream freezer and make strawberry ice cream.



Again, a problem. Ice cream is loaded with cream and sugar.

There was a time that even though I no longer eat sugar or cream, I would make an exception. But I made an exception for a piece of cake at a party with some friends the other day and within minutes I had a pounding headache that requiered medicine and the next morning the rest of my body was in a lot of pain.

I have tried making ice cream with coconut milk and honey instead and while it is ok, I really miss that creamy goodness that comes off of the dasher in the freezer. And a spoonful of stevia is not quite the same in a bowl of strawberries and coconut or soy milk.

Does anyone have any suggestions for substitutions? Because I don't want being healthy and pain free to be an experience of missing my favorites.

Wish I could help you out. I tried substitutions for a while to. Fact of the matter seems to be; when it comes to sugar, you just have to let it go and move on. Pretty soon it won't matter so much. :) Just eat the strawberries.....they're yummylicious......

I'm so sorry! I don't have a suggestion beyond the one above... I like my berries straight up. although a bowl of strawberries with just a small drizzling of honey is good too.

Try fat free cream cheese or low fat with the strawberries in a blender (my vita mix has this recipe) and skim milk and ice...makes a pretty good chocolate one, so I figure it should work with the strawberries! (skim milk first, then softened cream cheese, then strawberries and ice...is the order I would try first)
Personally, I like the stevia (though we use the Truvia brand), I just haven't tried making ice cream or anything with it. We use it for koolaid and drink mixes. Good luck!

Oh, maybe some honey sans cream would work. Really, now that I have been mostly sugar free for about 4 months, when I do eat sugar it is too sweet and I am finding I like things I didn't like before, so maybe I won't miss the cream. I'll try the honey and let you know how I like it.

Gaynell, I use the stevia for cooking, but just a bowl of berries with stevia on top is not so great- it doesn't have that same taste I want. I'll try your recipe, but I'll use soy milk instead- that is also a problem. While soy milk translates into most recipies, it doesn't always because it is too thin- no cream like properties.
Coconut milk works for a lot of the recipies, but it also lends the coconut flavor to the recipe, and I don't always want that.
